The specialties of fresh egg pasta: meat tortellini in soup, or filled-in with ricotta cheese and spinaches, typical Tortelli of Mantuan pumpkin, and above all the recipe that for generations is inherently jealously guarded by the women of Solferino, the Capunsei one recipe that dates back to the XIV century heritage of Habsburg domination.
