I Capunsèi are breadcrumbs of bread whose ingredients, although with different doses, are the same as filling the capon.
They belong to the ancient kitchen and were initially considered a poor dish because prepared with raw materials of recovery: stale bread, lard, garlic, parsley and cheese crusts, all kept together with some eggs and then seasoned with melted butter.
